In the kitchen, spices are the quiet drivers of intentionality. They represent a connection to distant lands and the patient craft of farmers and millers. We look for sources that prioritize transparency, freshness, and the preservation of heirloom varieties. This running list captures the specific jars and blends that have found a permanent place in our pantry—the ones that transform a simple meal into an evocative experience.

Dukkah

A vibrant, textured blend featuring toasted sesame seeds, almonds, and pistachios balanced with warm cumin and coriander. It provides a deeply savory, earthy crunch that is perfect for crusted salmon, roasted garden beets, or the traditional ritual of dipping crusty bread into olive oil and then the spice. We saw this first on one of Jamie Oliver's cooking shows and found a good spice blend on Amazon by uSimplySeason.

Za'atar

An aromatic, artisanal blend of hand-picked hyssop, toasted sesame seeds, and bright sumac. Unlike mass-produced versions, this za'atar carries a vibrant, lemony tang and an herbal depth that feels incredibly fresh. It is our favorite way to finish a bowl of labneh, season roasted chicken, or add an intentional layer of flavor to garden-fresh heirloom tomatoes.
