Ingredients
For the pan
- Coconut oil spray (or any non‑stick option)
Bananas + sugar
- 4 ripe bananas
- 2 mashed with a fork (chunky style)
- 2 for whipping into fluffy banana mousse
- 1 cup sugar (or 1/3 cup for a lighter sweetness)
Wet ingredients
- 3/4 cup melted butter
- 2 large eggs
- 1 tsp vanilla extract
Dry ingredients
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups double zero flour
Optional (still nut free, still fabulous)
- 1/2 cup chocolate chips
- 1/2 cup dried fruit
- 1 tsp cinnamon
Method
1. Prep the Pan
- Preheat your oven to 350°F.
- Grease a 9×5 loaf pan with coconut oil spray or your preferred non‑stick option.
2. Mash the First Two Bananas
- Mash two bananas with a fork.
- Leave them chunky — texture is personality.
3. Whip the Other Two Bananas + Sugar
- In a mixer with a whisk attachment, whip the remaining two bananas with the sugar.
- Mix until it looks like banana mousse.
4. Add Wet Ingredients
- Add melted butter, eggs, and vanilla.
- Mix well and scrape the bowl thoroughly.
5. Add Dry Ingredients
- Add baking soda, salt, and flour.
- Mix gently — this is banana bread, not CrossFit.
- Fold in the mashed bananas and any optional add‑ins.
6. Bake
- Pour the batter into your prepared pan.
- Tap the pan on the counter to release air bubbles.
- Bake for 1 hour to 1 hour 15 minutes, or until a toothpick comes out clean.
- Because oven temperatures can vary, we recommend that you start checking for doneness at 50 minutes and every five minutes thereafter. If if is browning too quickly, you can tent the top with foil until fully baked.
- If it cracks on top, congratulations — cracks are character.
7. Cool
- Cool in the pan for 10 minutes.
- Transfer to a rack to finish cooling.
