Overview

Every kitchen behaves differently—use your own judgment with ingredients, allergens, and doneness cues.

A nut‑free banana bread that balances texture, sweetness, and ease. Mashed bananas add richness, whipped bananas add lift, and a gentle hand keeps the crumb tender and soft.

Method

1. Prep the Pan

  1. Preheat your oven to 350°F.
  2. Grease a 9×5 loaf pan with coconut oil spray or your preferred non‑stick option.

2. Mash the First Two Bananas

  1. Mash two bananas with a fork.
  2. Leave them chunky — texture is personality.

3. Whip the Other Two Bananas + Sugar

  1. In a mixer with a whisk attachment, whip the remaining two bananas with the sugar.
  2. Mix until it looks like banana mousse.

4. Add Wet Ingredients

  1. Add melted butter, eggs, and vanilla.
  2. Mix well and scrape the bowl thoroughly.

5. Add Dry Ingredients

  1. Add baking soda, salt, and flour.
  2. Mix gently — this is banana bread, not CrossFit.
  3. Fold in the mashed bananas and any optional add‑ins.

6. Bake

  1. Pour the batter into your prepared pan.
  2. Tap the pan on the counter to release air bubbles.
  3. Bake for 1 hour 15 minutes, or until a toothpick comes out clean.
  4. If it cracks on top, congratulations — cracks are character.

7. Cool

  1. Cool in the pan for 10 minutes.
  2. Transfer to a rack to finish cooling.

8. Enjoy the inevitable compliments

Your kitchen now smells like you have your entire life together.
